This is something my brother in law started making for corn on the cob when we bbq, and now we never eat corn without it! Here are the players: real mayo, lime juice, chili powder, cayenne pepper, parmesan cheese.
The amount you make will depend on how much corn you are making. A little goes a long way. My bowl has a lot in it, because we are having company, but if it's just us, I make a tiny prep bowl size.
First, put your mayo in a bowl, then add lime juice. You may think you are watering it down, but when you add the cheese it will look right again. =)
Next add parmesan cheese, don't be stingy! It should look really grainy when you stir it together.
Next add the cayenne pepper so that you can see how much you're adding while it's still white. This totally depends on your taste, add a little or a lot.
Now stir in the chili powder, keep stirring in more until the whole bowl is a light peach color.
I tried to take a picture of the peach color, but it keeps getting washed out in the photo, this was the best I could do. Just spread it on your corn when it's ready! Yum yum, you will never do plain butter and salt again!
