Mama's Zucchini Bread

Zucchini is by far my favorite vegetable. I could eat it everyday, and almost do! I have made it almost everyway you can imagine. Today, because it is summer-and you know what that means if you have a garden...zucchini every other day, faster than you can eat them-I made zucchini bread. Here is my mama's recipe..
Makes 2 loaves OR 1 loaf and 6 mini loafs

Ingredients:
3 eggs
1 cup oil
2 cups sugar
2 cups grated zucchini
2 teaspoons vanilla
3 cups flour
1 teaspoon salt
1 teaspoon baking soda
3 teaspoons cinnamon
1/4 teaspoon baking powder
optional-1/2 cup chopped walnuts

wash and shred your zucchini with a cheese grater. Beat 3 eggs till foamy, using an electric mixer. Add oil, sugar, zucchini, and vanilla and mix well. In a bowl, combine flour, salt, baking soda, cinnamon, and baking powder. Sift together and gradually add to the egg mixture with the mixer on low. Add nuts if you wish. Spray pans with pam and pour batter in. Bake at 325 for 1 hour for loaf pan, less time for mini loaves. Check with a toothpick before removing (insert toothpick in the middle and if it comes out clean and dry, it's done). Cool completely on cooling racks before packaging.
Beat 3 eggs till foamy with an electric mixer.
